½ cup butter or margarine
2 tablespoons unsweetened cocoa powder
1/4 cup strong Seaport coffee, brewed
1/3 cup rolled or regular oats
2 large eggs
¾ cup sugar
Pinch of salt
1 tablespoon TexJoy vanilla
1 tablespoon grated orange rind
¾ cup flour
Melt butter with the cocoa and coffee, stir in oats.
Set aside 10 minutes to cool. Beat the eggs, gradually add sugar and beat until light and fluffy. Add salt, vanilla and orange rind, stir in butter/cocoa mixture.
Carefully add flour and mix lightly but thoroughly. Pour batter into a greased square pan, bake at 350 degrees F. for 25-30 minutes until tester comes out clean.
Yield: 8 servings.
